Say hello to your new favorite fish recipe! These crispy salmon bites are tender, flaky, flavorful, and best of all, super simple to make, making them a no-brainer for busy weeknights or meal prep.
Cooking whole fish fillets can be stressful trying to get the perfect crispy outside without overcooking the inside. But here, we cubed the salmon into bite-size pieces to create more surface area, guaranteeing even cooking and a perfect char every single time. Broiling makes this recipe even easier: the super-high heat makes for a fast cook time with no flipping, no basting, and no mess! After just 5 minutes, you’ll have the crispy-charred salmon of your dreams.
Salmon is rich in essential omega-3s and protein. To add even more flavor and nutrients, we marinated the cubes in a mixture of protein-packed Greek yogurt, salty soy sauce, smoky paprika, spicy chili crisp, and savory garlic powder. In the high heat, the creamy marinade caramelizes, while keeping the salmon buttery and juicy on the inside.
We love to mix and match this salmon with whatever sides you’re in the mood for. Pair it with roasted veggies, a crunchy fresh salad, or a grain bowl for a filling and flavorful lunch or dinner. Store any extra in an airtight container in the refrigerator up to 4 days. Leftovers make a great addition to your lunchbox the next day (the bites are delicious cold!) but can also be gently reheated in 15-second intervals in the microwave.
Ingredients:
- 1 pound center-cut skin-on or skinless salmon
- ¼ cup plain whole Greek yogurt
- 2 tablespoon soy sauce or coconut aminos*
- 2 teaspoons garlic powder
- 1 teaspoon paprika
- 1 to 2 teaspoons chili crisp
Directions:
- Position an oven rack 5 to 6 inches from the broiler, then preheat the broiler to high. Line a rimmed baking sheet with parchment paper.
- Cut the salmon into 1-inch cubes and set aside. Combine the yogurt, soy sauce, garlic powder, paprika, and chili crisp in a large bowl. Gently stir in the salmon cubes to coat.
- Evenly spread out the salmon on the prepared baking sheet. Broil until the salmon cubes start to brown, about 5 minutes. Let cool on the sheet, about 2 minutes.
Test Kitchen Tips:
Chili crisp is a popular condiment that’s packed with flavor or heat. You can find it at Trader Joe’s, Target, and Walmart, among other places, but feel free to sub in another chili oil or paste of your choice, such as harissa, Calabrian chili paste, or sriracha.
This recipe works great with either fresh or thawed frozen fish, skinless or even skin-on. If you don’t have salmon, sub in other firm-fleshed fish like cod or haddock.
Why do we use Greek yogurt here? First of all, it’s packed with protein and healthy fats. Plus, yogurt (like all dairy products) has natural sugars in it, which caramelize in the high heat to create a crispy, golden crust on the salmon.
Unlike most marinades, there’s no need for a long marinating time with this recipe: just let your oven do all the work! Marinades add flavor, but can also tenderize tougher meats like chicken or beef when left to sit for a long time. Since salmon is already naturally tender, it can be coated and roasted immediately.
