HOT GARLIC OIL YOGURT DIP

This lusciously creamy yogurt dip makes a great last-minute, crowd-pleasing appetizer. Whether you’re hosting a dinner party, bringing a dish to a potluck, or just looking for a feel-good afternoon snack, this quick and easy dip comes together in just 15 minutes, but tastes—and looks—beyond impressive.
Tangy Greek yogurt is high in protein and probiotics to help boost your immune system. Garlic and crushed coriander seeds are sizzled in healthy fat-rich olive oil that’s then infused with paprika and parsley for delicious savory flavor and a beautiful pop of color.
Think of this recipe as a template to create your own flavor combinations with whatever pantry and fridge staples you have on hand. Not a fan of coriander seeds? Try fennel seeds. Don’t have any fresh parsley? Swap in fresh dill. Either way, the oil can be made up to 3 days in advance and stored in the refrigerator (where it may solidify). To serve, bring the oil back to room temperature, then drizzle over the yogurt and pair it with crunchy vegetables, grain-free crackers, or socca for dipping.
Ingredients:
- 3 tablespoons extra-virgin olive oil
- 4 cloves garlic, thinly sliced
- 1 tablespoon coriander seeds, lightly crushed
- ¼ cup fresh flat-leaf parsley, finely chopped
- 1 teaspoon hot paprika
- Fine sea salt
- 1½ cups (about 10 ounces) whole-milk Greek yogurt
- Whole-grain crackers (such as Mary’s Gone Crackers), grain-free crackers (such as Hu)*, or socca, for serving
- Raw vegetables, such as baby carrots, celery sticks, or broccoli florets, for serving
Directions:
- Heat the oil, garlic, and coriander seeds in a small skillet over medium heat, stirring occasionally, until the garlic begins to lightly brown around the edges, 3 to 4 minutes. Stir in the parsley, paprika, and ¼ teaspoon salt and cook, 1 minute more.
- Spread the yogurt into a shallow serving bowl and drizzle the oil mixture over top. Serve with crackers, socca, or raw vegetables if desired.
Test Kitchen Tip:
Coriander seeds are small and brown, with a warm, aromatic, and slightly citrusy flavor. Lightly crushing the seeds makes them easier to chew and helps release their flavor into the oil faster. Simply place them between a clean dish towel and using a rolling pin or the bottom of a heavy pot to gently crush them.
