DARK CHOCOLATE BLUEBERRY CLUSTERS

This easy-to-make sweet snack brings together three nutritional powerhouses for a perfect combination of protein, fiber, and healthy fat that is so satisfying. Fresh, juicy clusters of blueberries are coated in a silky smooth melted dark chocolate, then topped with finely chopped pistachios for crunch.
Blueberries are filled with antioxidants, iron, magnesium, vitamin C, fiber, and so much more. If you’re tracking your sugar intake closely, be mindful that dark chocolate does contain added sugars, albeit much less than other types of chocolate like milk or semisweet. The darker the cocoa content, the better. Pistachios add a vibrant pop of green color, but feel free to swap in any nut you have on hand, like almonds, pecans, or walnuts.
If you’re making these for a crowd, this recipe easily doubles or triples. Store any leftovers in an airtight container in the refrigerator for up to 5 days.
Ingredients:
- 3 ounces dark chocolate (at least 70%), roughly chopped
- 1 cup (about 5 ounces) fresh blueberries
- 1 tablespoon unsalted shelled pistachios, finely chopped
Directions:
- Line a large baking sheet with parchment paper or a silicon baking mat.
- Place the chocolate in a large microwave-safe bowl. Microwave in 30-second intervals, stirring in between, until melted and smooth, 1 to 2 minutes total. Gently stir in the blueberries to coat.
- Spoon out small clusters of 4 to 5 blueberries onto the prepared sheet, placing them about 1 inch apart. Sprinkle each cluster with the chopped pistachios. Refrigerate until set, about 25 minutes.
Test Kitchen Tip:
Make sure the blueberries are completely dry before adding them to the melted chocolate, or the chocolate will seize (go from velvety and smooth to clumpy and thick).
